Moved *_IS_MMAP to CONFIG_UCW_* namespace.

BTW, PARTMAP_IS_MMAP was broken for a long time: the configure script
was setting PARTMAP_IS_MMAP, while partmap.c expected CONFIG_PARTMAP_IS_MMAP.
